The Ilocos Region is known for milk fish cultivating and processing, shrimp paste processing, rice, sugarcane, raising livestock and of course they are said to be good cooks. With the abundance of natural resources helped them to be more creative in many different ways. They are also said to be lavished when it comes to food. Their love for eating helped them create a good cuisine.
The Pinakbet is a healthy dish that is known all over the Philippines. Pinakebbet is an Ilocano word which means shrivel or dry up. The dish is made with different types of vegetables, meat, shrimps and the Bagoong or sometimes shrimp paste. Fatty pork is one of the ingredients that contributes flavor to this dish. To add a twist others put lechon or chicharon. Obviously pinakbet is a vegetable stew in shrimp paste. But unlike other stews, this viand from the Ilocos Region is a bit dry. The sweet taste of squash, the saltiness of the shrimp paste and the crisp vegetables makes this an irrestible scrumptuous dish.

One thing i miss way back home... is eating pinakbet and especially if it's a spicy one.... I do really missing it though. Everytime i go home, my mother really knows what to cook. She already knows what are the foods i like and missed much... It's just that i like eating this but i do nevermind the allergies aftermath eating it. And add to it i love veggies since highschool days, sort of it's kinda complete in all recados or vegetables. Most of the peeps here in PI doesn't really like it cuz of lot's of vegetables on it... lolz
